Going out to your favourite ramen restaurant might not be possible in Melbourne, but it doesn’t mean you still can’t enjoy a delicious bowl of ramen with your family! This delicious chicken ramen recipe is easy to make and can be made using Japanese organic ramen noodles such as organic buckwheat soba noodles.

Homemade chicken ramen

Although a quicker version of a traditional Japanese ramen, which can take years to master, this chicken ramen recipe is easy to make, tastes incredibly delicious and will please everyone in your household.

Ingredients:

  • Garlic (diced) x 2 to 3 cloves
  • Unsalted butter x 1 tablespoon
  • Salt-reduced chicken stock x 4 cups
  • Mirin sauce x 2 tablespoons
  • Organic tamari sauce x 3 tablespoons
  • Pepper x 1 pinch
  • Salt x 1 pinch
  • Boneless chicken breast (skin on if possible) x 2 pieces
  • Ginger (minced) x 2 teaspoons
  • Japanese sesame oil x 2 teaspoons
  • Spring onion (chopped) x ½ cup
  • Organic ramen noodles(buckwheat soba noodles if you can) x 1 packet
  • Dried organic shitake mushrooms x 28 grams
  • Large egg x 2

Method:

Cooking the chicken

  • Preheat the oven to 190°C.
  • Rub the chicken breast with the pepper and salt.
  • Grab a frying pan, heat over medium to high heat and add the butter. Once melted, add the chicken skin-side down.
  • Fry each side for 6 minutes or until they are golden brown.
  • Transfer the chicken onto a baking tray with baking paper and put in the oven.
  • Cook between 15 and 20 minutes until they are completely cooked through.
  • Take out of the oven and transfer onto a plate and cover in tin foil.

Making the ramen:

  • Add the Japanese sesame oil into a large pot and heat over a medium heat.
  • Add the garlic and ginger, frying for 3 minutes or until fragrant.
  • Add the mirin sauce and organic tamari sauce and slowly stir for a full minute.
  • Stir in the chicken stock. Cover the pot with a lid and bring to a boil.
  • Once it starts boiling, remove the lid and let it simmer for 5 minutes.
  • Add the dried organic shitake mushrooms and simmer for another 10 minutes.
  • While simmering, grab another pot for the eggs and fill it with enough water to completely cover them and bring to a boil.
  • Gently place in the eggs and reduce the heat to medium-low. Let it simmer for around 7 minutes.
  • Fill up a bowl with ice and water.
  • Place the eggs into the bowl and let them cool.
  • Peel off the shells and slice the eggs lengthways in half.

How to serve:

  • Fill a pot and boil the buckwheat soba noodles according to the packet’s instructions.
  • While boiling, slice the chicken.
  • Once done, strain the Japanese noodles and place into a serving bowl.
  • Layer the bowl with chicken pieces first, then the ramen broth, the soft-boiled eggs and finally the spring onion.
