Ingredients required for Keto Boston Cream Cake Roll:

  • 8 large eggs
  • 1/4 cup coconut oil melted
  • 1 tablespoon vanilla extract
  • 1 cup granulated sugar of choice I used erythritol
  • 4 cups Almond flour
  • 2 teaspoon Baking powder
  •  1 batch Keto Custard
  •  1 cup Chocolate frosting

How to prepare Keto Boston Cream Cake Roll:

  1. Firstly preheat your oven to 180C/350F.
  2. Grease with melted butter two 8-inch cake pans and set aside.
  3. Take a large mixing bowl, and beat together the eggs, coconut oil, granulated sweetener, and vanilla extract till it turns smooth.
  4. Gently fold it into the dry ingredients till it is fully combined.
  5. Pour the cake batter evenly amongst the two cake pans. Bake the cakes for 20 to 25 minutes, or until the toothpick comes out clean.
  6. Remove the cakes from the oven and let them cool completely. While it is cooling prepare the keto custard.
  7. Once the custard is set, with the help of a hand mixer blend it until smooth. Once it is smooth, layer the cake.
  8. Place the first cake on a flat surface and spread the custard all over it. Add the second layer of cake and spread it with the chocolate frosting. Refrigerate the cake for 30 minutes, to firm up.
