On Sunday, in Fiji it is Church Day. Most residents are Christian so Sunday is very important. Most people actually go to Church. This is a very important custom and you should be aware that most businesses have either limited hours or are completely closed every single Sunday. You might want to schedule something at the resort or a stay at the beach.
