Turmeric is often found in Indonesian dishes. For example, when cooking curry, turmeric must be added, otherwise the beautiful yellow color of the curry will not be made. Tips:

The soup itself is tasty enough without adding any seafood. You may substitute seafood with mushroom. If you are a vegetarian, replace chicken broth with water and season with some salt.

 INGREDIENTS (for two persons) :

Seafood of your choice

5 -6 pieces (~35 g) fresh shallot (sliced)

2 cloves garlic (sliced)

10 g fresh ginger (sliced)

15 g fresh turmeric ginger (sliced)

5 g whole coriander seeds (slightly crushed)

2/3 stalk (~20 g) fresh lemongrass (chucked)

3 dried salam leaves/bay leaves

2 kaffir lime leaves (centre vein removed)

2 large tomato (remove skin and chunked)

3/4 box (750 ml) chicken broth

250 ml water

¼ lime

Some scallion (optional)

Steps

Step 1:

Over medium heat, without adding any oil in a cooking pot, slightly brown crushed coriander seeds until fragrant.

Step 2:

Add some oil, add the two gingers, shallot and garlic and fry them until fragrant.

Step 3:

Add lemongrass and tomato. Cook until tomato is slightly soften.

Step 4:

Add chicken broth and water, then lime, salam/bay leaves and kaffir lime leaves. Cover and let the soup boils first. Then turn heat down and continue to cook for 10 mins until all tomato turn to puree.

Step 5:

Use a strainer to remove all ingredients from the soup. Then continue to cook the soup until simmering. Add seafood to cook for a few mins until they are all cooked.

You may add some scallion at the end for extra flavoring. The soup now is ready to serve.
